Cafeterias are vibrant gathering places where children interact, socialize, and share moments of genuine connection over lunch. The room hums with laughter, traded snacks, and the easy rhythm of friendship.

Yet alongside that energy comes the flip side: scraping chairs, echoing shouts, and the hurried rush to finish eating. For many students, this sensory overload makes it difficult to settle, connect deeply with peers, or even finish a meal at a pace that supports healthy digestion.

At Maple Grove Elementary in Boise, Idaho, a group of young leaders looked around their bustling cafeteria and envisioned a different kind of balance. They didn’t see a problem to complain about. Instead, they saw a canvas for change.

 

A Green Team’s Vision for a Calmer Space

The driving force behind this transformation was Kathleen Gandara, a Behavior Support Specialist at Maple Grove and a first-year Green Team Lead. Kathleen brought together a dedicated group of 27 students from 4th, 5th, and 6th grade. She gave them a mission rooted in nature-inspired design: weave living green into the heart of the school’s dining space.

Kathleen and her students researched how the color green affects the human brain. They discovered compelling evidence that green environments actively foster calmness. With this in mind, the project started with one clear intention. A more relaxed atmosphere would encourage slower eating, leading to improved digestion and greater emotional regulation when students returned to class.

Far from just a school art project, this was a wellness initiative nurtured by a caring educator who trusted these children to create positive change within their student community.

 

The Art and Science of Moss

Moments of discovery filled the entire process. The students learned that preserved moss could be dyed in vibrant hues and that different species offered entirely different textures.

“It felt calming touching it” one student shared.

That quiet observation immediately validated their entire hypothesis. The very material they were working with was already doing its job.

Throughout the journey, these students absorbed lessons no textbook could fully capture. They practiced teamwork and followed a project schedule. They made design decisions together and, in doing so, learned that leadership is as much about listening as it is about guiding. Words like excited, proud, calming the cafeteria, and working together bubbled up as they reflected on their work.

The four moss wall frames now hanging in the Maple Grove cafeteria are far more than decoration. They show what happens when students have the trust and freedom to identify needs, research solutions, and execute a vision. The Green Team members carry forward the pride of creation and the deep understanding that they have the power to shape their environment.

For the entire elementary community, the moss murals serve as a daily anchor of tranquility. This installation is just the beginning of a larger dream to reimagine the cafeteria as a space of calm connection.
